Gathered from the American Paddlefish (nicknamed "spoonbill" due to its unique snout), these fish come from the Mississippi and Tennessee rivers and provide a unique replacement for the classic Sevruga caviar. The American Paddlefish is closely related to the Caspian Sevruga, as their caviar is similar in taste, color, and size. The caviar has a hue that changes from light to dark steel gray, and has a buttery flavor to it. This type of fish is not a sturgeon species, but rather the Polyodon Spathula, which is found in the Mississippi River. Paddlefish caviar is favored by many chefs and foodies, and can be seen served with creme fraiche or blinis as an appetizer or garnish.
- (Solo/Alone on a special dish) On a spoon - Caviar is usually served solo, staying cold on a bed of ice. It is best enjoyed with a special spoon made of bone or mother of pearl, as metal utensils are said to change the flavor. It is recommended to take small bites to fully savor and enjoy the flavor.
- As an appetizer - Caviar is primarily eaten as a starter, usually accompanied by neutral-tasting food such as buttered toast points. It can also be consumed in a blini, a Russian-style pancake, and can be combined with sour cream.
- Paired - When combining caviar with other ingredients, the flavor and texture of the eggs should be the star of the dish. A touch of crème fraîche can add a smooth contrast to the distinct flavor of the caviar.
This caviar is produced by the American Paddlefish (Polyodon spathula) and consists of only roe and salt.
The average shelf life of American Paddlefish caviar varies based on storage conditions such as ambient temperature and the of container. Unopened caviar in its original container stored at -2℃ to 4℃ will maintain its prime freshness up to 4 months. To avoid introducing contaminants once opened it should only be picked with a sterile utensil. Once opened we recommend it to be consumed within several days. Always keep remaining caviar in the fridge.
How We Ship
In order to maintain freshness we package our products well. Our packaging includes a Styrofoam insulated refrigerator container with ice gel packs, which keeps the caviar fresh for several days. Regions with colder temperature and weather will keep the products fresh for a longer period.
Our American Hackleback Sturgeon caviar comes packaged in three different containers. When purchasing you have the option to select the weight and container. The available options are listed in the selection field and there is no mix-and-match. The three containers are:
- Glass Jar
- Gold Metal Tin
- Blue Metal Tin
The Blue Tin container dominated the market for a long time and currently it is the most popular and known container, but as everything progresses another type of caviar packaging was introduced, the Gold Tin. Gold Tin container is the best type of packaging since it is vacuum sealed when packaged. Vacuum sealed American Paddlefish Malossol Black Caviar can stay fresh longer.
Please do not base your purchasing decision solely on the image. We are still working on perfecting our images. Our images have been digitally altered to display texture and store brand. It is a digital representation of the actual product. The product packaging you will receive depends on the container that you chose upon selecting caviar.
