Osetra (Acipenser gueldenstaedtii) also known as asetra, oscetra, ossetra, and ossetrova. This medium-sized sturgeon probes the sea bed with a projecting snout. The snout is elongated and there are four barbels on its lower surface. It is equipped to vacuum up plants and small forms of sea life. Osetra caviar ranges in color from dark brown-gray to golden. It is the only variety of caviar with a distinct unique nutty flavor. All of the Osetra caviar sold at Caviar Malosol is ethically sourced and of the highest quality at very reasonable prices.
We offer four types of Oscetra caviar. Each one is described in detail on it's corresponding page, but here's a short summary:
- Imperial Osetra Caviar - also called Golden Oscetra caviar. Produced from the rarest and most mature Osetra sturgeon. Its big size grains have a nutty flavor, firm texture, and golden-brownish color.
- Royal Osetra Caviar
- Russian Osetra Caviar
- Siberian Osetra Caviar - produced from a Siberian sturgeon Acipencer Baerii (BAE). Roe flavor has a hint of the sea with rich nutty overtones, a delicate texture, and a clean, smooth finish.
