All of our salmon roe caviars are prepared using the traditional malosol (malossol) method, meaning “little salt” in Russian. This gentle curing process preserves the roe’s natural flavor, texture, and aroma without overpowering its character. Because our roe is sourced from wild-caught salmon, subtle variations in taste may occur between harvests, reflecting seasonal ocean diets and natural conditions.
