American Paddlefish is a cartilaginous cousin to the sturgeon, meaning that the Paddlefish skeleton is very similar in structure to that of sturgeon. The paddlefish can grow as large as 10 ft. and weight up to 300 pounds. Since its snout is shaped like a ducks bill it is therefore also known as Spoonbill. Paddlefish have been used by humans as a delicious source of meat for centuries and their roe combined with salt is made into a gourmet food known as caviar. Because they are wild their availability of food and diet varies and their roe ranges in color and complexity which plays a vital role in how their caviar tastes. Lately, spoonbill population has been declining dramatically for reasons such as over-fishing and barriers to fish movement like constructions of dams. Some states have either banned fishing entirely or have laws in place which limit fishing. This results in caviar scarcity and makes it extremely valuable and expensive. The average shelf life of American Paddlefish caviar varies based on storage conditions such as ambient temperature and a sterility of container. Unopened caviar in its original container stored at -2℃ to 4℃ will maintain its prime freshness up to 4 months. To avoid introducing contaminants once opened it should only be picked with a sterile utensil. Once opened we recommend it to be consumed within several days. Always keep remaining caviar in the fridge.
How We Ship
In order to maintain freshness we package our products well. Our packaging includes a Styrofoam insulated refrigerator container with ice gel packs, which keeps the caviar fresh for several days. Regions with colder temperature and weather will keep the products fresh for a longer period.

American Paddlefish caviar is sold in three different containers based on weight. When purchasing you have to select the size and type you prefer. The available options are listed in the size selection field and there is no mix-and-match. The three containers are:

- Gold Metal Tin
- Blue Metal Tin
The Blue Tin caviar container dominated the market for a very long time and is therefore the most popular and known container, but as everything progresses another type of caviar packaging was introduced, the Gold Tin. Gold Tin container is currently the best type of caviar packaging since it is vacuum sealed when closed. Vacuum sealed caviar can stay fresh and maintain it's original taste longer. The only downside to the Gold Tin is that it's difficult to open for some.
